Crunchy chicken nuggets with a kick! Healthier than fried, and so much tastier than store-bought! Kids and adults alike will enjoy these. Perfect as an appetizer, too!
Preheat oven to 400ºF. Spray a large sheet pan with non-stick spray. Set aside.
Rinse chicken breasts and pat dry. Cut breasts into chunks, somewhat bigger than bite size. Set aside.
Mix the flour and the Cajun seasoning thoroughly, in a pie pan or dinner plate. Add more or less Cajun seasoning, if you like things spicier or less so.
In a shallow bowl, beat the eggs and water or milk until completely combined. Place panko bread crumbs in a separate pie pan or dinner plate.
Dredge the chicken chunks in the seasoned flour. Coat them in the egg mixture, then roll them in the panko. Place them on the sheet pan. This step is messy, so to keep from “contaminating” your flour or egg mixture with the panko, rinse or wipe your fingers between chunks of chicken. Continue until all chicken pieces are coated.
Bake at 400ºF for 25 minutes.
