Great for a light lunch or as a side and delicious both warm and cold.
Heat oil in a skillet and cook onion and garlic for 2-3 minutes. Add tomatoes, salt and pepper and simmer on low for 25 minutes.
Meanwhile, boil water and cook pasta according to package directions, about 5 minutes. Drain well.
Add butter and 1/2 of the basil to the sauce.
Put pasta into a deep, flat pasta bowl and toss with the sauce. Garnish with the remaining basil and mozzarella.
