I love the mixture of the spicy jalapenos and the sweetness of the marinade on the chicken.
Mix together honey, vinegar, coriander and cumin. Cut chicken into bite size pieces and put in the marinade for at least 1 hour.
If you are using wooden skewers, allow them to soak in water for 10 minutes.
Carefully remove stem and seeds from the jalapenos and cut into bite size pieces. Remove chicken from marinade, set marinade aside.
Make skewers, alternating chicken and and jalapenos. Season with salt and pepper.
Grill for 6-8 minutes on each side. Brush with marinade a few times while cooking. Remove and serve.
