My Navy friends and I collected recipes for a cookbook, and this one was a favourite of mine.
Easy to put together, and the flavours meld beautifully.
Melt butter. Saute in it: curry powder, apple and onion, until onion is soft.
Add soup, cream or half & half, ginger and nutmeg.
Sprinkle salt and paprika onto chicken.
Place chicken in a single layer in a greased baking dish. Pour sauce over chicken.
Bake, uncovered, 90 minutes at 350F.
Serve with rice and sideboys.
*Sideboys can be: chutney, coconut, bacon pieces, sieved eggs, chopped peanuts, raisins or currants, sliced green onions, diced cucumber, preserved kumquats, grated orange rind, and shredded green pepper.
Don’t let quantity of curry powder sway you. The flavours all meld together to make a delicious sauce.

As promised, I made this dish and it was really good! My mother doesn’t like spicy food so I used a mild curry powder. This is my kind of comfort food and will definitely make this dish again.
