Slightly lemony veal or chicken sauce to pour over your favourite pasta. Easy to make, and even better the next day.
Simmer it on your stovetop, or bake it in your oven. Makes a tasty dinner party entree.
Heat olive oil in saucepan over medium heat. Add onions, and saute them until soft.
Dredge veal or chicken cubes in large baggie with mixture of flour, salt, and oregano. Add the meat to the onions and oil, and brown it. Do this in batches, so the meat is thoroughly cooked.
Stir in chicken broth. Make sure it covers the meat/onions. Simmer, uncovered, for 10 minutes.
Remove from heat, and stir in lemon juice.
Place mixture in baking dish, or keep in the pan you’ve cooked it all in if it can go in the oven. Cover.
Cook in 400F oven for around 20 minutes, or until sauce is thick and meat is tender.
Meanwhile, cook spaghettini al dente. Drain.
Toss meat sauce with grated cheese. Spoon meat sauce onto pasta in separate bowls.
