Chicken breasts stuffed with herbed goat cheese and drizzled with honey mustard.
Preheat oven to 375 degrees F.
Heat ovenproof skillet on medium high heat.
Cut slits to form a pocket in both of the chicken breasts, going as far to the perimeter as possible without cutting through the skin.
Fill the pocket with the goat cheese, pushing it as far into the back and sides as possible, leaving space at the front to close the chicken. Place skewers, or toothpicks into the chicken to try to keep it sealed. Season both sides with salt and pepper.
Pour olive oil into the hot pan, and after heated, place chicken into pan. Cook for two minutes on one side, turn over and immediately place chicken into the oven. Let cook for an additional 10-15 minutes (until internal temp is at least 160 degrees).
While chicken is baking, stir dijon mustard and honey together.
After the chicken is done, remove from pan and drizzle with honey mustard.

I fixed this tonight. It was great! The Husband really liked it. I served it with stir fried fresh green beans and mushrooms. This meal is a keeper in our menu planner. Thanks for sharing.
