Description

Cheesy, chicken-y, easy-to-make goodness. YUM!

Ingredients

  • 4 pieces Boneless, Skinless Chicken Breasts (may Use Up To 6 Pieces)
  • 2 Tablespoons Butter, Cut Into Cubes
  • 1 bag Thawed Broccoli Florets
  • 1 can Cheddar Cheese Soup (condensed)
  • ½ cups Milk
  • 1-½ cup Shredded Cheddar Jack Cheese with Jalapeños
  • ¼ cups Crushed Cheese Crackers (try Hot N Spicy Cheezits For Some Extra Pop!)
  • 3 Tablespoons Parmesan Cheese

Preparation

Preheat oven to 375F.

Place chicken breasts in a baking dish, sprinkle cubed butter over chicken and bake uncovered for 40 minutes.

Remove from oven, and place broccoli around chicken.

Mix soup, milk and shredded cheese; pour mixture over broccoli and chicken.

Mix crackers and parmesan, sprinkle over everything.

Bake uncovered for 20 minutes more.

So easy! So cheesy and delicious, even the kids will enjoy this recipe. I sure did when I was little, and I still do now that I am “big!”

just a question before i make this….you really bake the chicken for a whole hour without it getting too dry? just making sure, b/c i have a huge problem cooking chicken too long! ha

I made this last night with a few alterations to use what I had on hand. I used cream of chicken soup, and added a little canned green chiles to flavor it up a bit. Also used goldfish crackers (what Mom doesn’t have those on hand?).

This meal was very easy, and my whole family enjoyed it.

We had this for dinner tonight. I made it with regular Cheezits and Mexican shredded cheese because that’s what was on hand, but it was great anyway. I can’t wait to try it with jalapeno jack cheese and hot n’ spicy Cheezits. This is definitely going to be a repeat meal… fast, easy, and delicious!

def. easy dish…i had to buy the jack cheese as a block of cheese, so i shredded some (the required 1 1/2 cups,) but also cut up a few cheese cubes & placed it on the chicken which gave a nice spice to the chicken. all in all, it was a good dish. i would make sure you check your chicken. at 40 min. it was way done. i did use 2 tbls. of butter, but it was the spreadable kind, so i don’t know if i had used the stick butter if it would have been different, but oh well. i’ll know next time (i’m not the best cook) :(
