Just seven ingredients is all you’ll need to make this upside-down pizza casserole. I have a couple people in my family who don’t like onions and green peppers, so I don’t put them in and there is still wonderful flavor.
In a skillet, cook the beef, pepper and onion until meat is no longer pink; drain. Add soup and mushrooms. Transfer to a greased 9″ x 13″ x 2″ baking dish. Top with cheese and potatoes. Bake, uncovered, at 400ºF for 30-35 minutes or until golden brown. Makes 6-8 servings.
