These are an easy weeknight supper. The sweet peppers, spicy cajun and herb cream cheese are the perfect combination.
Heat oil in skillet. Add onion and chicken. Cook about 7 minutes, until chicken is browned, and onions are tender. Add peppers, red pepper flakes and cajun seasoning. Cook about 5 minutes, until peppers are tender. Serve on tortillas spread with herb and garlic cream cheese.
Note: When I make this, I will do some in a separate skillet with no onion, no red pepper flake, and little cajun, for the kids.
