Perhaps you may know Thai green curry, which is popular with the foreigners. The taste of the curry has to be sweet and a little spicy, but today we’ll dry it up.
In a wok, add cooking oil over medium high heat then add the green curry paste and kaffir lime leaves, stirring for 30 seconds or until golden brown. Add pork and keep stirring, then add coconut milk, sugar, and fish sauce. Taste and adjust seasoning. Add shrimp. At this point, add the eggplant or your desired hard vegetable.
Continue to stir-fry around 1-2 minutes until the sauce has dried up. Add sweet basil and chili. Stir a little bit, taste and adjust seasoning.
Serve over rice.
