Perfect dish for a light summer lunch or dinner. Could also be adapted for the grill!
For the dill butter, mix fresh or dried dill weed with soft butter and a pinch of salt. Serve at room temperature.
For the salmon: Sprinkle salmon with salt and pepper and sear in a hot frying pan in a small amount of olive oil until flesh is opaque, about 3-5 minutes per side.
Drizzle another sauté pan with about 1 teaspoon olive oil and 1 teaspoon of the dill butter. Heat the pan over medium heat. Add vegetables and lightly saute them until they reach your desired level of crunch. Remove vegetables to a serving plate and top with a salmon fillet. Top hot salmon with a dollop of dill butter and serve.
