Broiled salmon with chilled creamy topper using leftovers from my Fresh Corn Salsa recipe (see my recipe box).
Season salmon with salt, pepper, and drizzle lightly with olive oil. Broil salmon on high on the top rack of the oven for 8-10 minutes, until opaque.
Meanwhile mix the Fresh Corn Salsa (see my recipe box) with sour cream. Remove salmon from the oven and top each piece with 1/4 cup of corn mixture.
