A tasty, easy chicken casserole. A Southern favorite.
Combine the chicken, soup, sour cream, salt and pepper, and poppy seeds. Add one of the sleeves of crackers (crushed up). Mix thoroughly. Pour into 9×13 inch baking pan. Cover the top with the remaining crackers that have been crushed up, and then pour the melted butter across the top. Bake at 350 degrees for 30 minutes. I usually serve this with brown or wild rice.

I’ve been making this for years, too, and I love it. Very kid friendly. I work as a private chef for a family with 4 children and I’m making this AGAIN this weekend for them, they all love it! I used to serve it on buffets at very upscale resort and guests always asked for the recipe. I fancied it up because I thought they might not appreciate being served a dish made with cream of chicken soup for the price they were paying to be there, but I liked the original just as well, if not better.
