A delicious sandwich so full of zucchini and vegetables that you won’t even miss the meat!
1. Preheat the oven to 375 degrees F.
2. Pour oil into a skillet over medium heat. Add onion, zucchini, and garlic and cook until veggies become slightly tender. Season with red pepper flakes.
3. Lay out 4 squares of foil that are large enough to wrap up one of the sub rolls. Put a roll onto each square of foil. Spoon the zucchini mixture into each roll until full. Spread a layer of marinara sauce (or diced tomatoes) onto the zucchini mixture. Top with a handful of shredded mozzarella. Wrap the rolls in foil, making sure that they’re completely closed. Place wrapped rolls on a baking sheet.
4. Bake for 15 minutes in the preheated oven, until bread is heated through, and cheese is melted.

This is really, really surprisingly good! I was gonna save a bite for My husband (who’s not so much into meatless meals) to taste… But before I knew it there was only a bite or two left… But I just couldn’t not take that next bite. I love the crunch of the sautéed zucchini, and all the flavors melded together very nicely and tasted very “Italian”. Although I followed the recipe closely, I had some garden-ripe cherry tomatoes so I cut three of them in half and topped the sandwich with them before baking and enjoyed the burst of flavor they added. All I can addis… YUMMY!!!
