The perfect dish when cherry tomatoes are overflowing from the garden. They are tossed together with shrimp, pasta and a quick tomato flavored white wine cream sauce. Easy to put together but rich and satisfying. Equally good with chicken.
Cook pasta according to package directions in salted water.
Meanwhile, clean shrimp and season with salt and pepper. Add 1 Tablespoon of olive oil to large skillet and cook shrimp 3-4 minutes over medium heat until cooked through. Remove from pan and set aside. (You could also grill the shrimp.)
Add another Tablespoon of olive oil to pan and saute shallot over medium low heat for 1-2 minutes until translucent but not browned. Add garlic and cook an additional minute. Increase heat and add tomato paste and and stir until it begins to caramelize. Deglaze pan with white wine, bring to gentle boil and let reduce 3-4 minutes. Add cream then reduce to a simmer. When heated through, stir in grated cheese. Add salt and pepper to taste. Continue cooking on low until pasta is finished cooking. Toss drained pasta in with sauce in the skillet. Add in shrimp and cherry tomatoes and gently toss to coat.
Garnish with fresh basil and additional grated cheese, if desired. You could easily substitute chicken for the shrimp.

YUM! We made this for a quick and easy dinner and it was perfect! The one thing I would change was the parmesan. I used the cheese in the shaker and it left our sauce a little grainy. I think fresh parm would have worked wonder BUT overall, AMAZING

This was good, quick and easy to make. I didn’t have all of the ingredients so I had to make a few substitutions but it still came out nicely. I had expected it to be a little saucier than it actually was but maybe that had to do with my substitutions? I would make it again.
