This should be rated 10 mitts! It was not only easy to prepare, but fantastic. Three of us ate the entire dish (along with rice and beans, so that’s saying something). I can also see how you could put this together the day before and pop it in the oven after work the next day. I wouldn’t change a single thing.

I made these last night and they turned out great. I was happy to find an easy enchilada sauce to make from scratch. Now when I have a recipe that calls for enchilada sauce I will go to this recipe.

These were delicious; the friends who shared our meal used the word “authentic”. I added 1/2 teaspoon of cumin to the sauce, and let it boil down gently until it was reduced by 20-25%, to make it a little thicker. Thank you for this recipe; this one is definitely going into the file!

What size can of enchilada sauce do you use? Does it matter with the taste if it is chicken broth or water? Thanks!

My kids were raised in a small town in the Nebraska panhandle. There was a family- owned taco restaurant that made the best cheese enchiladas. For years I have tried to figure out what was in their sauce. EUREKA, I FOUND IT!! I made these tonoc, and they were marvelous. My daughter and grandson were over for a few minutes and my girl didn’t get out of the car, so I warmed up a couple and trotted out to the car, gave them to her and my grandson to eat in the car. SUCCESS! Nostalgia and taste buds rule! She opined they were the same she remembered from her childhood. I’m sending her the recipe post haste, and now I can make them any time I want. I’m a happy camper. Thanks for the memories, and a big thanks for the recipe!
