This is a go-to dinner in my house – we are busy and weeknights are jam packed ! This recipe is SO easy and can be customized to your tastes. Leftovers go great into salads as well and we also enjoy them as “burgers” with homemade fries.
Mix all ingredients (except the frying oil) thoroughly together in a bowl – be sure to break up the tuna. If mixture seems too loose, add more bread crumbs. Cover and chill mixture for 20 minutes.
In a skillet or frying pan, add enough olive oil to cover that pan to 1/4 inch or so thickness. Warm on low.
Shape the tuna mixture into patties and place in skillet. Turn heat to medium. Cook patties until they are firm and browned on both sides.
