An easy slow-cooked carnitas dish that is sure to fill your Mexican craving.
Put pork roast in a crock pot and cover with tomatoes and chiles, fajita seasoning and garlic. Cook for 6–8 hours on low.
After cooked, remove any bones that might have been in the roast and shred. Add sliced peppers and onions, stir and cook for another 30 minutes.
Add lime juice before serving meat on tortilla shells with toppings of your choice.
