This is a very basic “don’t have a lot of time” taco casserole. Nothing fancy in this, but you can add and delete as it suits you. My kids love this, and it only takes 30 minutes to get it to the table.
Preheat oven to 350F.
Crush Doritos and place in the bottom of a 9×13 baking dish.
Brown and drain ground beef. Remove from heat, stir in taco mix, cheese soup and milk.
Pour this mixture evenly on top of Doritos. Top with lettuce, tomatoes/salsa, and cheese. Bake for 15-20 minutes.
Options we have tried:
Added onions while browning the meat
Add drained beans to meat mixture
Added salsa to the meat mixture
Use spicy Doritos
Use Nacho Cheese soup
Left out tomatoes/salsa
This recipe is very flexible – double it, halve it, add favorite ingredients. It is very hard to mess up. My kids like the basic version.
Don’t make this planning to have leftovers, because the chips get soggy. (We never have the problem of leftovers with this dish.)

I made this for dinner last night and I thought it was great. My picky kids didn’t love it, although I can’t imagine why?!? It was a quick and easy dinner!

Donna, Yes you do bake it with the lettuce – shredded iceberg can handle the 20 minute bake time. I have never tried it with anything but iceberg.
