This is a recipe for the typical ham salad we all know but adapted a bit to suit my personal tastes. Instead of adding relish, celery or cucumber, I use dill seed to create that familiar pickle sort of flavor without the green crunch.
This is a great way to use up ham leftovers!
Start out by hard boiling the eggs. I love to use an egg timer for this, it works so great, takes about 8–10 minutes. Then after pouring out the hot water, refill the pan with cold water and ice cubes to let the eggs cool down.
Peel the eggs, then dice eggs, ham and red onion and combine in a medium-sized bowl. Add the mayonnaise to this, then the dill seed and onion powder, with a pinch of garlic powder to taste.
Makes enough for about 6 sandwiches. Serve either as sandwiches on bread or with crackers.
