Shredded chicken tacos – yum!
Place the frozen chicken breasts in the bottom of the crock pot. Sprinkle the taco seasoning on top and pour the Ro-Tel in (do not drain). Cover and cook on low for 6 hours.
Once you are ready to serve, shred the chicken with 2 forks. Serve on tortillas with sour cream and cheese.

Made these tonight for Cinco de Mayo and they were PERFECT!!!! Doubled the recipe to have plenty of leftovers for lunch tomorrow. Used homemade taco seasoning, and on top of the 2 cans of Ro-Tel (1 original and 1 mild) I added a spoonful of homemade salsa courtesy of my sister (Ree’s restaurant style salsa). Best Cinco ever!
