A twist on traditional chicken kebabs!
While the grill is heating up, get your big platter out and your skewers. Open up the bacon and get ready for goodness!
Mix together cream cheese and diced jalapenos. Cut up pineapple into chunks big enough for skewers. Keep all of this right in front of you!
Cut up the chicken into thick slices. Then, cut a slit 1/2 way through each slice. Inside each slit, shove a spoonful of cream cheese. Then fold chicken over and wrap with bacon, then stick on skewer, followed up by a piece of pineapple. Continue this routine until all the chicken is gone.
I sometimes drizzle raspberry chipotle sauce over the chicken skewers before putting on the grill. Adds an extra kick and is good!
Cook on the grill until the chicken is done, and serve up with tortillas and some good sides, or by themselves as an appetizer. If you want extra spice, add more jalapenos. I make these for our family, so 3 is perfect!
