Succulent pork “pockets” filled with cheese in a flavorful tomato sauce.
1. Cut sirloin into small slices, approximately 1.5 cm thick.
2. Lay each slice down horizontally and cut into it (horizontally from the top to make a pocket), but not completely through.
3. Fill each “pocket” with a slice of cheese.
4. Close and secure “pockets” with a toothpick (wooden or metal).
5. Mix corn flour with pepper and salt in a plate, roll each “pocket” in flour.
6. Over medium heat, sauté onion and garlic briefly in butter. Once they are softened, add the meat and fry on each side for 8-10 minutes over medium flame.
7. Once the meat is done to your desired doneness, add tomatoes and wine, stir and gently simmer for about 5 minutes.
Serve hot with boiled potatoes.
