Description

I’ve made this for my family plenty of times. It’s delicious and there is always plenty of leftovers.

Ingredients

  • ¼ cups Butter
  • ¾ pounds Sliced Mushrooms
  • 2 whole Minced Garlic Cloves
  • ½ pounds Penne Pasta
  • ¼ cups All-purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Milk
  • 3 Tablespoons Dry Sherry
  • 4 cups Shredded Cheddar Cheese, Divided Use
  • ½ teaspoons Thyme
  • 4 cups Cooked Chicken Cut Into Cubes
  • Salt And Pepper, to taste
  • 1 cup Toasted Bread Crumbs

Preparation

Preheat oven to 350 degrees F.

Melt butter in a large saucepan over medium high heat. Add mushrooms, garlic, 1/4 teaspoon salt and pepper. Saute for about 12 minutes.

While the mushrooms are cooking, cook the penne pasta according to the package directions. Drain and set aside.

Reduce heat on the mushrooms to medium. Sprinkle flour and cook, stirring for 1 minute. Gradually add broth and milk stirring until blended. Reduce heat and simmer until thickened, 3-5 minutes.

Remove from heat. Add sherry and 3 cups cheese, stirring until cheese melts. Add 1/4 teaspoon salt and 1/8 teaspoon pepper and thyme. Stir in the cooked and drained pasta and the cooked and cubed chicken. Pour into a buttered shallow baking dish.

Mix remaining cheese and bread crumbs, sprinkle over casserole.

Bake, uncovered until the sauce bubbles and the top is lightly browned, around 35-40 minutes.

How can you say it is delicious and that you would make it again and only give two stars because you thought it was too cheesy? It is called CHEESY Chicken Tetrazzini after all. Seems strange to me is all. This was great. really yummy. I used 8 ounces of cheese in the saucenand another 4 ounces on top (about 3 cups in total) and it was great. Thanks for the recipe.

It tastes delicious but is so super cheesy and I just feel too guilty eating it. I think the amount of cheese could be cut back by at least a cup. It’s almost like a spruced up mac n cheese. I would make it again for kids because it is simple and plain.
