With all these veggies, it’s healthy and quick.
Dice the fresh tomatoes. Peel, pit, and dice up the avocado.
Spoon in half of the jar of artichoke hearts and a bit of the oil.
Add minced garlic, cheese, and lemon juice.
Mix all the ingredients together in a medium-sized bowl.
Eat!!!! It is SO SO SO SO good.
*Whole jar of artichoke hearts is 6 ounces or 170ml – the recipe only uses half of the jar.
