A not-so-spicy take on red beans and rice that’s ready to go quickly.
Saute onion, garlic and bell pepper until slightly softened. Cut sausage into 1/2 inch rounds.
Place all ingredients into large dutch oven. Cover and simmer on med low for 30 minutes. You may want to simmer with the lid off for awhile if it seems to wet. It’s done when the rice is done. Check for crispy rice (not fully cooked) and cook a little longer in needed.
