I have little patience for tedious recipes. Who has that kind of time? This recipe is easy and flavorful, the perfect combination for a lazy cook like me!
In a large skillet cook celery, onion, bell pepper and garlic in olive oil until tender. Stir in all other ingredients and bring to a boil and then reduce heat. Cover and simmer for 15 minutes. Remove bay leaf and serve!

Kellie, I just use regular rice. Sorry for the confusion.

What kind of rice did you use? I used regular rice, since it didn’t specify “minute” or otherwise and cooked it for around an hour.

I think this is the easiest recipe I’ve ever seen for Jambalaya. Sounds delicious! I don’t mind tedious recipes, but I usually don’t have the time to make them
Thanks for sharing!

The word jambalaya grabbed me, and once I saw “lazy cook,” you had me! Can’t wait to try out this recipe, finally something that isn’t too intimidating. Thanks!
