I had this in a restaurant and loved it so much I had to come home and recreate it! My husband loved it, too.
Steam the cauliflower for 10–15 minutes until done, then remove from heat and set aside in the steamer pan.
In a large thick pan, sauté the ham pieces until slightly browned. Remove from the pan and use that same pan to make the cheese sauce.
Melt butter over low heat. Stir in flour, salt, pepper, cayenne pepper, and Spike (if using). Blend to make a paste. Cook for a few minutes, stirring, so the flour won’t taste raw.
Slowly stir in the milk, stirring after each addition, to combine. When through adding milk, add cheese, stirring to combine.
Turn off heat. Stir in ham, mix well. Stir in cauliflower, mix lightly.
Serve immediately.
Serves 4-6.
