On a quest to recreate the Potbelly oatmeal chocolate chip cookies, I came up with this recipe. The cookies turned out delicious, even though they still weren’t an exact match to the Potbelly cookie.
Cream the Crisco and sugars together. Add in milk and eggs. Mix some more. Add in vanilla, mix again.
In a separate bowl, combine flour, baking soda, and salt. Gradually add the dry mixture into the wet mixture. Once combined, stir in oats and chocolate chips.
Bake at 375ºF for about 8 to 9 minutes. The cookies will be slightly brown on the outside and a nice creamy color on the inside, which will result in a crisp edge with a gooey center. I let some bake for about 10 to 11 minutes and they turned out a little too crisp for me.
These cookies were great. I am still searching for the Potbelly recipe though. Anybody ever come close to making something similar?
