Double the ginger and a shot of sour apple liqueur makes these chewy cookies worth the pucker.
1. Preheat oven to 350 degrees F.
2. Cream butter and brown sugar until fluffly. Beat in egg, sour cream and apple liqueur.
3. Whisk together flour, baking soda, ground ginger, baking powder and salt. Add to the creamed mixture. Fold in candied ginger.
4. Drop or roll rounded tablespoonfuls of dough and place on ungreased baking sheets about 2 inches apart. Bake in the 350ºF oven for 12–14 minutes or until cookies are light brown.
5. Cool on baking sheets for a few minutes before removing to cooling racks.
