A country cooking type of meal.
Preheat oven to 375ºF.
Mix the corn muffin mix, milk, and egg until a smooth consistency is formed and set aside.
In a large skillet, brown the meat and add the taco seasoning as instructed on the packet.
In a medium skillet, warm the beans and corn, then add in the cooked and seasoned ground beef. Let this simmer for 5 minutes. Pour this mixture into a 9-inch pie pan and spread the corn muffin mixture on top.
This will bake in the oven for 15 minutes or until the corn muffin mix is completely done.

I made this for lunch today and it was very good! Loved the sweetness of the cornbread with the taco flavoring. Yum!

Made this tonight! Big hit with the hubby (and myself)! I sauteed a small chopped onion with the meat and since I didn’t have any ranch flavored beans, I just added a packet of ranch dressing mix with the taco seasoning! It made a little too much for my pie pan, but the extra was perfect for 2 ramekins! Delicious! Definitely going in the recipe box!

My family loved this!! I only had chili beans so I drained them a bit and I added some taco cheese before the muffin mix. It was yummy@! The sweet of the muffin mix was a nice contrast to the taco seasoning.
