Savory, easy beef casserole with a tasty Southern-style twist. The casserole is topped with strips of pastry in a decorative lattice pattern.
1. Brown ground beef in a skillet.
2. While beef cooks, peel potatoes and cut into small cubes.
3. Put potatoes in a small microwave bowl with the water. Cook in the microwave for 10 minutes. Drain potatoes when done.
4. When ground beef is cooked, drain and transfer to a casserole dish.
5. Put olive oil and onions in a skillet and cook over medium heat. Add garlic salt, onion powder, kosher salt and pepper. Cook until onions are translucent.
6. Once the onions are completely cooked, add ground beef, corn, barbecue sauce and potatoes into the skillet. Thoroughly heat but do not stir hard enough to tear the potatoes apart.
7. Once thoroughly cooked, pour into an 8×11 casserole dish. Turn oven on to 450ºF degrees.
8. Unroll the pie pastry on a cutting board and cut into 3/4″ strips. Place across the beef casserole in a lattice pattern.
9. Put in the oven and cook for 15–20 minutes until pastry is lightly browned.
