Description

No need to buy frozen pizza thingies when you can whip these up un a snap – a big hit with the kids…toddlers to teens!

Ingredients

  • 1 cup Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Sugar
  • 1 dash Salt
  • 1 cup Milk
  • 1 whole Egg
  • 1 cup Shredded Mozzarella Cheese
  • 2 Tablespoons Grated Parmesan Cheese
  • ½ cups Chopped (slices Of) Pepperoni (or More To Taste)
  • Warm Pizza Sauce For Dipping

Preparation

The correct name for these would be Pizza Puffs…my son has always called them “cupcakes”.

Preheat oven to 375 degrees F.

In a large bowl combine the flour, baking soda, salt and sugar. Whisk in the milk, egg, mozzarella cheese and Parmesan cheese. Let it sit a few minutes while you chop the pepperoni. Add in the pepperoni, stir until combined.

Spray your mini cupcake pan well to grease it. Add in spoonfuls of mixture. It can come up to just below the top of each opening. You should have just enough batter to fill 24 mini cups. Bake for 18-22 minutes or until puffed and golden.

Let cool for a few minutes, run a butter knife around each one to loosen and serve with some warm pizza sauce!

These are good leftover too, store in a plastic bag and reheat for a few minutes in a 350 degree F oven.

I even pack hin a tiny container of pizza sauce – hopw they enjoy!

These were not a hit in my house. The crust was flat and hard and the inside was more like a soufflé. Didn’t make for a success here, but the idea was great.
