This is perfect comfort food: rich, creamy and easy to make.
Finely chop onion and garlic. Thinly slice mushrooms.
Saute the onion, mushrooms and garlic in olive oil until the mushrooms are tender and the onions are getting translucent. Put onions and mushrooms aside
In same skillet, brown the beef and pour off excess fat. Once the beef is browned, add the vegetables back to the pan.
Mix in soup and sour cream and simmer for 15 to 20 minutes.
While the sauce is cooking, boil water and cook egg noodles. Reserve a little of the cooking water. When the noodles are cooked, drain them, put them back in the pot and add the sauce over the top. If it needs to be thinned out, use the cooking water or some milk.

Made this last night and it was so good! I added salt, pepper and a tablespoon of mushroom base which gave it even more mushroom flavor. I also doubled the amount of mushrooms. Great recipe, thanks!

Sounds good and simple too, I’ll add this to my “recipes to try” list. I’m always on the lookout for weeknight meals.
