Lightly encrusted with a hint of summer.
Preheat the oven to 400ºF.
In one bowl, lightly beat the eggs with a pinch of salt.
In a different bowl, combine all other ingredients, minus the tilapia.
To bread the tilapia, first coat it with the egg mixture, then lightly press it onto the herb-citrus mixture.
Line a baking sheet with aluminum foil. Bake the tilapia filets for 20 minutes.
Serve it with a green salad, steamed veggies or mushroom risotto.
