This is an incredible recipe! Sooo tasty and a nice change from your typical Mexican dishes.
I plan to double this next time, we all LOVED it and there was none left!
In a skillet with oil over high heat, sear both sides of chicken until brown. Remove the chicken and set aside.
Saute garlic and jalapeno. Deglaze the pan with lime juice. Add the chicken breasts, half-and-half, and chopped cilantro. Salt and pepper to taste; cover with foil and place in the oven or transfer to a glass dish if your cookware doesn’t transfer to the oven. Bake for 1 hour at 350ºF.
Remove chicken and thicken the pan drippings with Parmesan cheese. Serve over Spanish or Mexican rice.
Delicious!

Hey Tonya, it was so yummy. Will be making this again and again. We ate it with white rice and steamed veggies added.
My hubbyis from Mexico and loves a little spice so he really liked the kick from the jalapeno. Thanks again.

Lolita, You are bacially going to use the lime juice to help get all those yummy bits off your pan after you are done sauteeing your jalapeno and garlic. Hope you LOVE it!

I’m a novice…what does “deglaze the pan with lime juice” mean? Thanks I bought all the ingredients to make this but I’m not sure what this step means.
