Sage is such an underused herb. Make this pasta with your favorite protein and veggies and pair it with a cream sauce or a a spicy oil-based sauce. Whatever you make, I’m confident you’ll find this pasta recipe delicious!
- Pour flour into a large bowl.
– Chop up your herb of choice into small pieces and combine with the flour.
– Make a well in the middle of the flour.
– Crack the eggs (whole) into the center and start to incorporate them into the flour. (This will be sticky, but it’s fun to use your hands.)
– When it all comes together, move the dough to a floured surface and start kneading it with your hands for a few minutes.
– Step away from the dough. Seriously. For about 20 minutes, more if you’d like.
– Do you have a pasta roller? Great! Start rolling it out. If you’re like me and use a rolling pin, though, don’t fret… it will just take a little longer and a little more muscle.
– Try to get the dough as thin as possible. I mean *really* thin. Like a few sheets of paper thin. As soon as you add the fresh pasta dough to your boiling water, they plump up a LOT.
– Cut the pasta in any shape you want. Long strips are the easiest for me. I use a pizza cutter to make the process go a little faster.
– Bring a large pot of water to a boil and add a decent handful of salt.
– The pasta should only take 2-3 minutes to cook.
– Enjoy with whatever sauce, toppings, deliciousness you prefer to eat. Let me know how it comes out!

i cant wait to try this!! i love homemade pasta, and never thought of adding herbs to them!!!
