This is my modification of my mother-in-law’s recipe. A mix of whatever-you’ve-got-in-your-fridge-freezer-pantry makes an easy, quick and tasty supper!
Dice onion, celery and carrot.
In a large skillet, saute onion, carrot and celery in a few tablespoons of oil until soft. Brown ground beef until no longer pink. Drain fat.
Add mushrooms, frozen veggies (you can substitute frozen mixed veggies if you wish) and cook until soft and heated through.
Add tomatoes or tomato sauce, Worcestershire sauce, salt and pepper, any seasonings you wish to add, and a couple of squeezes of ketchup and barbecue sauce. Stir to combine.
Add the cooked macaroni noodles and stir until combined.
You can top with grated cheese if you’d like. You can also add or omit veggies if you’d like.

My great-grandmother made what she called Slumgullion on Saturday nights. She actually used all the leftovers from the week and mixed them together. My grandfather and his siblings always talked about how awful it was. This sounds A LOT BETTER! Can’t wait to try it.

Wow..The name brought back memories of my childhood..My mom uses the meat, pasta, sauce, but used baked beans in a can! No need for bbq sauce then…Very economical..Try it sometime..We had that when the baked beans would go on sale!

I grew up on this same concoction under a similar name of “SlumGum”. Brings back great memories!
