No more canned Enchilada sauce…this is super easy to make and is mild enough for your kids!
Put all ingredients into a blender and blend till well mixed. If you want a more spicy sauce, increase the Chili powder to 2 Tablespoons.
Put 1 T. of oil in a medium sauce pan.
Turn stove to med-high and pour the sauce into the pan. Cook until bubbly and thick, stirring continually, about 5 minutes.
**If you cannot find Caldo de Tomate, use 3-4T. mild chili powder,1/2 small onion, and 1/8 t. cumin.
This is a perfect sauce for Chicken or Cheese Enchiladas and Pork Tamales.
