I love bean burgers. They are so easy to make, and you can literally substitute all sorts of ingredients. This one is my new favorite. The salsa is a great addition, a sweet taste that pairs well with the tangy/ savory burger. These burgers work well without the bun, with a dollop of salsa on top (if you are watching carbs).
1. For the burgers, in a pan, saute oil, onion, bell pepper and garlic until onion is translucent. Dab excess oil off with a paper towel. Set aside.
2. Rinse the black beans, and then dry them thoroughly with a paper towel (if left wet, the burgers tend to fall apart). Mash black beans in a medium bowl. Add onion saute, and all other burger ingredients, mixing until combined.
3. Form the bean mix into 4 patties (about 1/4 cup each). Flatten slightly and transfer to the fridge for about 1 hour. This allows them to firm up slightly. The longer you refrigerate them, the better they hold together when fried.
4. For the salsa, combine mangoes, green onion, rice vinegar, sesame oil and red pepper flakes in a small bowl. Set aside in the fridge until ready to use.
5. Place 1 tablespoon of oil in a large pan, over medium heat. Fry burgers, about 5 minutes on each side, or until brown and crisp. Serve on a bun with a dollop of salsa.
