Description

A casserole with chicken, cheese, broccoli and a creamy white sauce. Yum. It’s a good comfort dish that warms you up on a cold night. There is a suggestion at the bottom of the recipe that you might want to try.

Ingredients

  • 4 whole Chicken Breast
  • 3 heads Cut Cooked Broccoli
  • ⅓ cups Margarine Or Butter
  • ½ cups Flour
  • 1 Tablespoon Salt
  • 1 cup Milk
  • 2 cups Chicken Broth
  • 1 teaspoon Lemon Juice
  • 1 cup Mayonnaise
  • 5 whole Slices Of Bread
  • 2 cups Shredded Cheddar Cheese

Preparation

In a pot of salted water, simmer the chicken till tender. (You can save the water/broth if you just want to use that instead of buying chicken broth.)

Spray a casserole dish with cooking spray (we use a big dish, probably about 19x8x2, but we’ve used a 9×13 dish and it fits). Tear the chicken into bite-size chunks and lay them flat on the bottom of the dish. Next add the broccoli over the chicken.

In a saucepan, melt the margarine, then add flour and salt to it, stirring till it mixes together. Next add milk and broth, cooking and stirring till it’s creamy and thick.

In a bowl, beat the lemon juice and mayonnaise together, mixing it into the sauce and taking the saucepan off the heat. Pour the sauce over the meat and vegetables. After that, cut the bread into cubes and sprinkle the bread over the dish, putting shredded cheese on top of that. Stick the dish in the oven for about 25 minutes on 350F or until the cheese is golden brown. Then eat!

Note: We cook about 2 cups of rice for us and scoop some in a bowl and put the casserole over that. It’s a good idea to try that. It soaks up some of the sauce.

We loved it but I didn’t add a full Tablespoon of salt. I did maybe a 1/2 teaspoon. We served it over rice. Thanks.

This was really tasty but it wasn’t as creamy as I expected it to be. To be fair, I did forget to add the milk to it. Next time, I will add the cooked rice to the dish before cooking and also add some sour cream and cheese to the sauce. My husband enjoyed it and he does not like broccoli!

I’m also giving it four stars, and I’ll tell you why. It’s kind of bland, and it’s really fattening. And I’m wondering if Paula Deen has a very similar recipe in one of her cookbooks. However, we did enjoy it and I will make it again, but not too soon cause my ass can’t afford it!
