My mother’s amazing pork tenderloin recipe. I’m not sure where she originally got this recipe, but after my mom passed away, I thought it needed to be shared. Easy and absolutely delicious, this is the recipe I pull out whenever I want to impress … or moan in sublime happiness.
Combine all ingredients except tenderloins in a medium mixing bowl. Stir together until all ingredients are combined well. Pour mixture into a gallon size zip-lock bag.
Drop in the tenderloins and coat with the marinade. Carefully squeeze out the extra air and seal. Store overnight in the refrigerator.
The next day, when you’re ready, preheat the oven to 350F.
Pour the tenderloins and all of the marinade into a baking dish (I use a 9″ x 12″ pyrex dish) and bake for 45 minutes. Take the tenderloins out of the oven and let sit about 10 minutes.
Slice 1/2″ thick medallions at an angle and dribble the leftover marinade over the slices as a sauce.
