A simple yet amazing salmon dish. The slightly salty flavour of the prosciutto compliments the sweetness of the delicious salmon.
Preheat oven to 400 F.
Wrap each salmon fillet with two slices of prosciutto, covering as much of the salmon as possible, and place in a deep casserole dish. Brush the olive oil evenly over the wrapped fillets, and season with a pinch of salt and pepper.
Bake the salmon in the middle rack of the oven for 20-25 minutes, depending on size of fillets, until the prosciutto is slightly crispy around the edges.
