This is my favorite winter casserole–easy, makes the house smell great and bakes for a long time. Very “grandmotherly” tasting!
Preheat the oven to 325 degrees (F). Spray a 9 x 13 inch baking pan with cooking spray.
Lay pork chops in the bottom of casserole dish and season with salt and pepper. Place sliced onions on top of pork chops and season with salt and pepper. The last layer is the potatoes, seasoned with salt and pepper. I leave the potatoes unpeeled if the skins are thin; if the skins are thick, I peel them. Whisk the soup and milk together in a bowl until lumps are gone and pour the mixture over the potatoes. Spread to cover all the potatoes.
Cover the casserole tightly with foil and bake for 1-1/2 to 2 hours or until the potatoes are tender. This casserole is so simple, but the golden mushroom soup flavor is so fabulous! It will not be the same if you substitute any other cream soup.

I use it on roast also, it makes the best gravy.
