Italian-inspired turkey burgers with a surprise inside!
In a bowl, mix together the ground turkey and pesto. Add salt and pepper to taste.
Divide mixture into four portions, then divide each portion in half so you have 8 equal portions of meat.
With your hands, flatten each portion into a patty. Place a slice of mozzarella cheese on one patty, then top with second patty and seal by pinching the meat around the cheese. Repeat with remaining patties.
Cook to preferred doneness on a well greased grill or grill pan (and I do mean well greased… they stick!).
Toast the hamburger buns and slather a layer of mayonnaise on one side of each bun. Place burger on bun, top with tomato slices and bun top.
