Simple, fast, and delicious!
I serve this with rice, so I start the rice cooker first.
Turn the oven on to Broil.
In a small bowl, mix the mayonnaise, lemon juice, capers, and lemon pepper.
Rinse the salmon fillet to remove any stray scales and pat dry.
Lay the fillet or steak skin side down in a glass baking dish. Spoon the mayonnaise sauce mixture over the top and spread evenly over the top and sides of the fish.
Place in the oven on the center rack – not anywhere near the top! As the fish bakes, the oil will pop and may hit the heating element, but so far I haven’t set the smoke alarm off or set my apartment on fire…
For one fillet, ten minutes is usually perfect, for the thicker steak cut add a couple minutes. The top will bubble and brown, but don’t let it get black all over or the fish will be overdone and dry. Serve with rice and steamed vegetables.
