Description

This pork is so versatile, we like it in salads, tacos, burritos, or even on a sandwich. It is a guaranteed favorite for all ages!

Ingredients

  • 4 pounds Pork Roast Bone-In
  • 1 bottle Red Taco Sauce In A Jar
  • 20 ounces, fluid Cola
  • 1-½ cup Brown Sugar
  • 2 Tablespoons Cumin
  • 1 teaspoon Cayenne Pepper

Preparation

Place pork roast in a crock pot and cover half way up with water. Cook overnight on low. You can cut the time but it will not be as tender and soak up the sauce as well.

Take pork out of crock pot and shred. Discard the water that is left and mix remaining ingredients in the crock pot.

Place shredded Pork back in the crock pot with sauce. Stir to cover and cook an addition 2 hours. This also can be cut in half if you do not have the time, it just won’t have as much flavor.

After the two hours, serve how you wish. Our favorite way is to make lime-cilantro rice, and black beans and serve burrito style with all the toppings.

This is a tasty way to eat a pork roast. I didn’t have the red taco sauce so I substituted with some RedHot wing sauce and some salsa…and I also cooked it in my electric pressure cooker. Its was done, tender, and ready to eat in 30 minutes. When it was done cooking I added a can of corn and spooned the saucy mixture over rice and made a side of corn pudding. Perfect side for the sweet and spicy pork!
