Roasted chicken with a taco seasoning (Mexican) flavor, topped with fresh cilantro taste. So juicy!
Rinse chicken thoroughly inside and out under cold running water. Pat dry with paper towels.
Put chicken into a baking pan. Rub with olive oil and sprinkle taco seasoning over the chicken and rub on all sides (as it says on the packet for the taco seasoning). Pour the water in the bottom of the pan. Then sprinkle on the chopped fresh cilantro.
Roast the chicken in the preheated oven at 350F for 1 1/2 – 2 hours or to a minimum internal temperature of 180 degrees. Let cool 10 to 15 minutes and serve.
Every 30 minutes I would baste the chicken. That helped make it really moist!

This recipe may just save a couple of fights in my house! My boyfriend can have mexican and I don’t have to make tacos yet again. Can’t wait to try it.
