This is in my regular meal rotation. It’s so so good! My husband is keto now and I just replace the rice with cauliflower rice and adjust cooking time a bit.

Hmm, I left a comment, maybe it should be a review instead. We tripled it since we have a large family, but the cayenne pepper was overwhelming. Don’t triple the cayenne pepper! We eat spicy all the time, but this killed us. ![]()

I’ve made this several times! Love this! Best Jambalaya I’ve ever had… granted I’ve never been to Nawlin’s…. but I’m sure it’s the best outside it! ![]()

This turned out delicious. Great technique. I added 1 lb diced chicken breasts and reduced the shrimp. I did find I needed more liquid because I used brown rice. Also added some cajun spice mix I had on hand. It dubled easily and I cooked it in a cast iron dutch oven rather than a sauce pan.

TexasPiglets: that shouldn’t warrent a bad review. That was a fail on your part. You always have to be careful with the hot spices.

We tripled the recipe since we have a large family. I think the 3tsp of cayenne pepper killed it. It was so hot only 3 of the 8 of us ate it. Definitely if you need to make more than 1 recipe, hold off on the cayenne. We eat spicy all the time, but this ruined the pot. Our mistake.
