This is in my regular meal rotation. It’s so so good! My husband is keto now and I just replace the rice with cauliflower rice and adjust cooking time a bit.

Hmm, I left a comment, maybe it should be a review instead. We tripled it since we have a large family, but the cayenne pepper was overwhelming. Don’t triple the cayenne pepper! We eat spicy all the time, but this killed us.

I’ve made this several times! Love this! Best Jambalaya I’ve ever had… granted I’ve never been to Nawlin’s…. but I’m sure it’s the best outside it!

This turned out delicious. Great technique. I added 1 lb diced chicken breasts and reduced the shrimp. I did find I needed more liquid because I used brown rice. Also added some cajun spice mix I had on hand. It dubled easily and I cooked it in a cast iron dutch oven rather than a sauce pan.

TexasPiglets: that shouldn’t warrent a bad review. That was a fail on your part. You always have to be careful with the hot spices.

We tripled the recipe since we have a large family. I think the 3tsp of cayenne pepper killed it. It was so hot only 3 of the 8 of us ate it. Definitely if you need to make more than 1 recipe, hold off on the cayenne. We eat spicy all the time, but this ruined the pot. Our mistake.
