This has been a family favorite for years. Being Asian, we use Panko for breading instead of traditional crumbs. When my son and his friends were younger, they would consume plates of these fillets with ranch dressing that was set out for veggies. Now that they’re college age, they still raid the refrigerator for the ranch when this fish is served!
Wash sole fillets then dredge in flour.
Dip in egg/water wash then coat with Panko.
Pan fry quickly on both sides. Serve with lemon and green onion for the grown ups, or ranch dressing for the kids!
Great with rice pilaf, salad, carrot sticks (for the kids to use up the ranch dressing).
